A healthy, vegetarian treat for the whole family and a perfect way to disguise vegies from the fussy eaters of the family.
Any vegetables that need to be used can be substituted for the carrot and zucchini, making this a very versatile dish.
Ingredients
1 ½ cups zucchini (grated)
1 ½ cups carrot (grated)
2 cups cooked, mashed sweet potatoes
½ cup coconut flour (great at absorbing juice from zucchini!)
¼ cup of chopped herbs of your choice: parsley, coriander, oregano, rosemary, mint
¼ cup sesame seeds (great to increase your calcium!)
Pinch salt & ground pepper to taste
Plain coconut yogurt for topping to serve
Method
Squeeze juice from the zucchini.
Mix all the ingredients except sesame seeds and yogurt in a bowl.
Take a tablespoon of the mixture, roll in the sesame seeds and place on a lightly greased hot gridle or fry pan.
Cook for approximately three minutes till brown, then turn over and repeat.
To serve
Top with a spoon of plain, coconut yogurt and a sprig of mint, parsley or coriander.
