Every loves a good muffin, but they can be very unhealthy with their high sugar and simple carbs. So, here’s a recipe that is full of goodness and sweetened with fruits, but doesn’t skimp on flavour.

Ingredients
1 cup rice flour
½ cup coconut flour
½ cup unprocessed oat bran
¼ cup almond meal
¾ cup raspberries
1 large Granny Smith apple – washed, cored and cubed
1 large banana – mashed
2 tablespoons macadamia or avocado oil
¼ – ½ cup water
Method
Put all the dry ingredients into a bowl. Wash, core and cube the apple, add to the dry ingredients along with a mashed banana and raspberries (fresh or frozen) and the oil. Add enough water to just mix. The secret to the best muffins is not to overmix. Line the muffin tins with paper patty cases then spoon dollops of the mix into each. Top with an almond or raspberry then bake 180 C for 15 – 20 minutes. Eat hot or freeze (if there are any left over!)
